Green Onion Pancake (파전) – RECIPE

One of the CLASSIC side dishes/sharing appetisers at a Korean restaurant we’re sure you’ve come across. The green onion pancake is the most basic style of pancake, other styles you may have tried are kimchi pancake and seafood pancake!

LEVE L: Intermediate

C O O K   T I M E : 20minutes

B A T T E R :

1 cup flour
1 tsp salt
1 cup cold water

F I L L I N G :
1 bunch of green onion
1 egg (beaten)
1 sliced red pepper (optional)

 

D I P P I NG

SAU C E
1/4 cup soy sauce
1 tbsp rice wine vinegar
1 clove garlic (minced)
1 tsp sesame oil
1 red pepper (diced and de-seeded)

O P TI O NAL
1/2 tsp sugar
1/2 tsp hot pepper flakes

H AR D WAR E
1 small sauce bowl 1 big mixing bowl 1 flat frying pan
1 ladle
1 flipper
1 pair of chopsticks

 

M E T H O D :

  1. Mix the dipping sauce ingredients and in the sauce bowl. Then, to make the batter, pour the flour and salt in a mixing bowl that is able to fit the length of the green onions.
  2. Beat one egg and set aside.
  3. Add some oil to the frying pan and leave it on a medium heat. Ensure the pan is big enough to match the length of the onions, otherwise cut them accordingly. Once the frying pan is hot, gently place green onions into the batter and coat them. Try to keep them in a straight line.
  4. Using tongs or chopsticks, gently place the coated onions into the pan. Try to lay them out as flat as possible. Quickly take the remaining batter and fill in the gaps between the onions to join them into one unified pancake.
  5. After 1-2 minutes it will gradually solidify with little bubbles popping. At that point, pour the beaten egg evenly all over the pancake.
  6. After another 1-2 minutes the egg will solidify. Use the flipper to check if the bottom of the pancake is browning. You want to flip it if the other side is lightly browned.
  7. Let it cook for another 2-3 minutes.
  8. Serve by slicing into a grid shape with the dipping sauce. Enjoy!
